It’s May and that means the beginning of graduation season for many high school and college seniors across the country. It’s a time for families to celebrate their children’s hard work and wish them well as they enter the next chapter in their lives, whether its graduating to a secondary education or moving on to the “real world.” Graduation parties and dinners have become just as important to the tradition as the diploma itself. Festive Chef Jacques Pepin needs no better excuse to create a fitting feast on his Janson Media DVD, Jacques Pepin’s Graduation Celebration.
In this springtime celebration Jacques Pepin prepares a splendid al fresco buffet lunch. A delicate Smoked Trout with a creamy Egg-and-Pepper Salad is just right for a sunny June afternoon. And Jacques’ classic Chicken Galantine — a boneless chicken stuffed with pork, black mushrooms, pistachios and armagnac, poached in a rich stock and served in it’s own aspic — is a decidedly elegant picnic food. A succulent baked Ham Georgia with a tangy apricot-mustard glaze and a deep, sweet-savory peach sauce is paired with a simple side dish of buttered Red Swiss Chard. For the cheese course, we learn how to make creamy fresh-herb Fromage Blanc served with roasted garlic. Two marvelous desserts complete the buffet — Chocolate Cloud Cake, a spectacular layered confection of fluffy sponge cake, cognac whipped cream, and crunchy chocolate cookie crust, topped with a bittersweet chocolate glaze, and a Cherry-Raspberry Pillow of fresh cherries and berries baked in a puff-pastry pie.
No stranger to critical acclaim, Jacques Pepin’s Graduation Celebration has scored a favorable three star review from Video Librarian. Produced by KQED-TV, Graduation Celebration is exclusively distributed by Janson Media to worldwide Television, VOD, New Media, Non-Theatric, and DVD/Video markets.
